Hi there! It’s Susie from Once Upon a Lilac House with you today to talk about one of my favorite foods ever- pancakes! For me pancakes scream comfort food. I can remember my step-dad making them on Saturday mornings while we watched cartoons. To this day, having pancakes gives me happy feelings of family and the weekend!
Now that I have my own kids, I’ve passed the tradition of weekend pancakes down to them, but with a healthy spin. My kids do not know the difference between these healthy, protein packed flap jacks and their completely nutrition-less counterparts. You can feel good about feeding your kids (and yourself) this quick, easy and healthy breakfast!
Ingredients
2 ripe bananas
4 eggs
2 tablespoons peanut butter or almond butter
Dash vanilla
Dash cinnamon
Mix all of the ingredients in a blender. For best results, use a nonstick griddle heated to 400 degrees. These are sweet enough to serve without syrup if you wish! (But they also taste great with a little jelly on them.) Enjoy!
