Who doesn’t love peanut butter and jelly sandwiches? As a kid, this was always a favorite, but I actually still crave them from time to time! This is the recipe I go to when I need something healthy and nourishing for a quick on-the-go breakfast or a post-workout snack.
Of course, this recipe is great for both kids and adults, so everyone in your family will be happy! Packed with healthy fats and protein and slow digesting carbs, these will help control everyone’s appetite and provide steady energy for your day!
Peanut Butter and Jelly Bites
Ingredients:
1/3 c. oats or ground flax seed
1/2 c. (4 oz) peanut butter
½ c. oats
1/3 c. protein powder (any variety – vanilla, berry, OR peanut butter flavored)
2 T. agave syrup/ honey/ maple syrup
1 T. raspberry or strawberry jelly
¼ c. fresh berries (I used sliced strawberries)
1/4 tsp. salt
1 1/3 c. popped millet
1/3 c. vanilla protein powder or oat flour for finishing
In a food processor or stand mixer, combine ground flax seed through salt. Mix in popped millet with a rubber spatula.
Put the remaining 1/3 c. chocolate protein powder in a wide bowl. Using a tablespoon-sized scoop, scoop out truffles from the mixture and drop them into the bowl of protein powder or oat flour. Roll each one to coat.
Aaand they’re ready to eat!
Store the finished truffles in a sealed container in the refrigerator for up to a week, or freeze.
Makes 23 rounded Tbsp. truffles (about 0.6 oz or 18 g each)
Nutrition per truffle: 80 calories; 4 g fat (1 g saturated); 8 g carbs; 1 g fiber; 5 g protein
